
1 1/2 cups flour (all purpose)
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
Mix the dry ingredients above then add below
1 cup sugar
1/4 cup salted butter (melted)
1 cup sour cream or yogurt
2 eggs
2 tsp vanilla paste or extract
Beat until it comes together then add below
2 cups Rhubarb cut into bite size pieces
2 tbsp flour. (Use to cover the rhubarb pieces)
Pour batter into a 9 x 13 baking dish. Mix together below for the topping.
1/2 cup flour
2 tsp sugar
3 tbsp brown sugar
1/2 tsp nutmeg (I use fresh grated)
A pinch of kosher salt
Mix all together then add 3 tbsp of melted butter. It should be crumbly.
Sprinkle over the top of the batter.
Bake on 350 about 30 minutes. Cooking time depends on your oven.
Let cool and serve with coffee.
