
2 1/4 cup flour
2 tsp ginger
1 tsp baking soda
3/4 tsp cinnamon
1/4 tsp salt
3/4 cup butter (room temperature)
1 cup white sugar
1 large egg
1 tbsp water
1/4 cup dark molasses (I like black strap)
2 tbsp sugar for dusting (cane sugar)
Preheat oven to 350 degrees. Mix all the ingredient together. Shape dough into walnut sized balls, and roll in sugar. Chill for 15 minutes before baking. Place on baking sheet with parchment paper. Use a cold baking sheet between batches. Use the heal of a cup and flatten dough about half the height it was rolled. Bake at 350º for 8-10 minutes.
